This delightful scallion-like wild onion is one of the first harbingers of spring. They make a superb stuffing for fowl, a superb addition to a fresh green salad, and a superb alternative or complement to onions in French [onion/ramp] soup. They grow abundantly in our woods, but we harvest them cautiously to avoid depleting our beds.
